“All of what I had created had to be more elegant—they have to be Michelin star dishes,” says executive pastry chef Ghaya Oliveira of her whimsical desserts she serves at Daniel Boulud’s eponymous two-Michelin-starred restaurant in New York City.

Oliveira, like countless other chefs, pushes herself to the limit with her dishes, drawing inspiration from both her surroundings and past experiences.
