米其林指南的觀點

The restaurant was founded in the early Showa period and the owner-chef has preserved the recipes of his father, who was a sumo wrestler. He makes chanko nabe using a technique called ‘soep daki’ in which the ingredients are simmered in chicken bone dashi and soy sauce. The flavour of the chicken and vegetables is infused in the soup, and it’s made into zosui. He takes seriously the technique and mind-set that were passed down to him, even as times change.
