米其林綠星
Malaysian owner-chef Hafizzul Hashim opened Fiz in 2023 in a bid to showcase his native food culture. His experience menus are an ode to his childhood memories and family recipes, emphasising bold flavours and Malaysian produce. Each course is intricately crafted and composed of numerous ingredients. Expect to spend up to 3 hours over your meal. Speciality cocktails and wine pairings complete the experience.
"We support small businesses in Singapore and Malaysia by sourcing from them, as well as sharing storage knowledge to reduce produce spoilage. We smoke ingredients with recycled sugarcane fiber collected from hawker centers. In addition, our stocks and seasonings are made with trimmings and uphold heirloom recipes and forgotten ingredients."
