It is said that to eat Sichuan cuisine is to consume Sichuan’s history. Chef Okubo cooks his sansho and chili chicken stir-fry with plenty of chili pepper and Sichuan pepper. The twice-cooked pork is left unskinned, to stick close to Sichuan practice. Saikaku focuses on popular dishes that have developed into home cooking, such as mapo tofu and dandan noodles. To get as many people as possible to appreciate Sichuan cooking, Okubo strives to make his shop welcoming to casual diners.
