Born and raised in Nagano, the owner-chef went to Kyoto to study traditional Japanese cuisine. He readied himself working at a restaurant in Gion and serves orthodox seasonal kaiseki cuisine. In spring, cherry blossom buds are used as seasonal decoration for the hassun; in summer, green maple leaves; and in autumn, persimmon leaves. At the end comes mochi rice topped with bamboo shoots, dried ayu, matsutake, or other fish or vegetable. The restaurant’s special character comes through in the homemade confectionery served for dessert, such as gyuhi mochi (a softer variety of mochi) or Joyo manju.
