The owner-chef spares no effort, checking the ingredients with his own eyes and drawing the water used for cooking from a well. His skills from his ryotei training are evident in such things as shirako and bamboo shoots cooked in broth in spring and chargrilled ayu with pickled cucumbers in summer. To end comes Koshihikari rice cooked in an earthenware pot. The simplicity draws attention to side dishes like homemade tsukemono and chirimen sansho.
