L'Épi Dupin has become Dupin and François Pasteau has handed over to Nathan Helo (formerly at Rostang) but the establishment's ecological and locavore philosophy has not changed: locally sourced fruit and vegetables from the Île-de-France region, treatment of organic waste, water filtered on site etc. An ethos in tune with nature and "good living" also conveyed by the food.
