MICHELIN Guide’s Point Of View

The Canadian spruce table-tops and diatomite walls exude simple, natural beauty. The omakase menu carries an unusually high proportion of cooked food, but can be customised to accommodate the cravings of raw fish lovers. Most produce originates from Japan and is shipped straight from Tokyo’s Toyosu market. Sushi rice is seasoned with akazu vinegar to complement the fatty fish. Ask for seasonal specialities such as kobako crab.
