MICHELIN Guide’s Point Of View
Bib Gourmand: good quality, good value cooking
The laid-back, upscale atmosphere and trendy terrace give Aman da Bravo a certain Côte d'Azur feel. This is the place where you can escape the hustle and bustle of the city and discover Turkey's answer to modern bistronomy. The dishes are based on local produce, international influences and a handful of ingredients that pack a punch. Think locally caught horse mackerel fillet, seared to perfection and topped with an oyster sauce that gets an extra kick from the addition of fish stock, accompanied by a cauliflower puree made with coconut milk for optimum creaminess. Intensity at its finest!

Diverse women, diverse styles: Female chefs of Istanbul
Despite the fact that cooking has been seen primarily as a female duty for centuries, it is an unfortunate irony that cuisine, and especially refined cuisine continues to be considered a male exclusive profession. Female chefs still have to exert harder work compared to their male counterparts in order to achieve a similar level of success and regard. However, as is the case in the rest of the world, plenty of female chefs in Istanbul have proven themselves and achieved the recognition they deserve. And they all reflect their own personalities and signature styles in their cuisines.
