Its reputation for quality and consistency has seen generations of loyal patrons come for the rich, hearty signature so thick with ox knee cartilage that you can stand a spoon up in it. Take a bite of the slow-cooked cartilage doused in the special soy dipping sauce and all is right in the world. A long queue is the norm here but, thankfully, takeaways are also possible.
