The name ‘middle’ signifies an interval, a single moment in the constant changes of nature. Chef Yasuhiro Fujio focuses his desires on the ingredients he obtains each day, crafting set menus from flashes of inspiration to infuse his creations with fun and imagination. The spare interior design suggests a Zen-like journey in pursuit of truth. There are no menus, and what is felt is left up to the customer. Each meal is a window on the thoughts and imagination of the chef and the time.
