Château de Vignée, an 17th-century manor and farmhouse in the Ardennes, is a perfectly lovely place, a red-brick castle whose turrets evoke storybook adventures. Inside, it’s surprisingly contemporary, its rooms and suites presenting a soothingly sedate vision of modern luxury. What elevates it into something extraordinary is the presence of its restaurant, Arden, where chef Marius Bosmans, a veteran of some of Belgium’s finest kitchens, prepares dishes crafted from vegetables grown in the hotel’s own greenhouse.
