Behind the name Seiva, which we’re told is “a tribute to the art of resin extraction” and to the ties this craft has with chef David Jesus’s family, lies an unmistakable admiration for sap, said to be “the vital essence of nature”. David Jesus defends, with incredible fervour, the idea that it’s possible to create good food using what the habitat around us provides, and his vegan/vegetarian restaurant is proof of that. The menu, complemented by two set options (6 or 11 dishes), changes frequently with the season and the chef’s creativity, always innovating and building new combinations. In general, you’ll find contemporary-style proposals and carefully considered presentation, always full of nuance (we loved the Paella de silvestres da temporada, seasonal wild-mushroom paella, created with different mushrooms in varied textures).
