In its comforts it’s properly luxe, if rather more a boutique than a classic grand hotel; the restaurant, Hõlm, is an open-plan modern Estonian restaurant that derives its name — and much of its menu’s inspiration — from a century-old cookbook by Lydia Grünmann Holm.
