Located in the swanky, studiously hip Hotel Jerome, it’s not hard to see why Prospect is one of the hottest restaurants in Aspen. Chef Ross Kilkenny brings a certain California swagger, mirroring the colorful, eclectic space with his au courant menu, as in kimchi rösti with a fried egg and okonomiyaki sauce, or chèvre ravioli with Calabrian chili, charred broccolini, and golden fig. Eye-catching desserts, like an intricate, architectural composition of mocha savarin, dark chocolate and passion fruit caramel, offer a fitting finale. Not that any further enticements are necessary, but a compelling cocktail program provides tipples for every taste (including non-alcoholic options)—just one more reason for the influencer set to snap photos.
