"We are committed to working within a global and sustainable philosophy and we inform our customers of this approach. We offer single set menus to optimise each ingredient and limit waste. Almost all of our local produce comes directly from small producers. We and our artisan partners share a good sense of the land, with or without certification. Our seafood is from sustainable French fishing."
