Chef Masakazu Ishibashi

Born and raised in Japan, Chef Ishibashi has spent years training and honing his craft. His passion, however, began long before his formal education in the art of sushi making. He was 10 years old when his father, a sushi chef himself, first taught him to make sushi. “I would be in the kitchen every day after school. I started learning to peel prawns and clean clams, before making chawanmushi and finally, cutting fish,” he recalls. “Even after 26 years of making sushi, I’m still learning and refining my technique. [To me], continual learning is essential for a chef.”

After graduating from San Diego State University, Chef Ishibashi joined the illustrious Michelin starred Nobu Restaurant where he trained under one of the most celebrated Japanese chefs in the world, Chef Nobu Matsuhisa, for 3 years. His career then took him back to Japan where he helmed the kitchen as Executive Chef of the iconic Ginza Sushi Ichi, Tokyo, Japan. 

In 2016, Chef Ishibashi joined the team at an exciting new edomae concept in Singapore, Shoukouwa Sushi Restaurant, and an impressive 4 months after opening its doors, became the only Japanese restaurant in Singapore to be awarded 2 Michelin stars. Named as an oasis of stillness, serenity and harmony, two-Michelin-starred Shoukouwa Sushi Restaurant offers guests an authentic, world-class fine dining edomae sushi experience, in an intimate space of tranquil elegance. To maintain its fine cuisine standards, Shoukouwa presents omakase-style menus subject to the availability of the freshest and finest seasonal produce.
