Sister to RyuGin in Tokyo, Shoun RyuGin delivers similarly creative cuisine using local produce. The head chef visits local farms regularly and prepares the food using traditional Japanese techniques. The 7- and 10-course menus are expertly rendered, with a map showing the ingredients’ origin. Squab from Pingtung is grilled over Bincho charcoal and straw to accentuate its delicate texture, while eel is cooked in various ways according to the season.
