Abounding with flavour, it is cooked to perfection and focuses on local produce, in particular fish and vegetables. Drawing on a menu devised by Meilleur Ouvrier de France David Boyer, Hyères-born chef Nathan Helo puts together a range of technically sophisticated multi-course set menus, including a visually appealing vegetarian tasting menu.
