MICHELIN Guide’s Point Of View

Owner-chef Masaki Izumi regards Japanese cuisine as the heart of Japanese culture, so approaches his work from the standpoint of wagokoro, the Japanese spirit. Naturally, he places great emphasis on dashi. The meal begins with a sour appetiser to accent the delicate flavours of the stewed dishes that follow. Ayu dried high above a fire is an early-summer speciality. Festive ingredients are arranged on the hassun to highlight the season and convey the traditions of the former capital.
