The owner-chef learned the tradition and innovation of Kyo-ryori at a ryotei and worked as head chef of a Shojin restaurant in New York. He uses a variety of local vegetables procured from farmers in places like Kamigamo and Joyo City. The shogoin kabura cooked in tuna dashi is a winter tradition. Fresh-picked bamboo shoots in the spring are boiled, as is, in sake and water. Ryotei techniques are evident in the dishes, which appear plain at first glance.
