MICHELIN Guide’s Point Of View

Motoi Gyoza is a gyoza dumpling restaurant owned and operated by a French-trained chef. He first made dumplings to delight his daughter, because he saw so little of her due to his work. Two of her favourite ingredients are shrimp and chives, so they take centre stage in his ‘Papa Gyoza’, which uses no garlic. The crimped edges are crispy and fragrant, and the addition of ginger and coriander makes it even more nutritious. These gyoza dumplings are little parcels of love.
