MICHELIN Guide’s Point Of View

The open kitchen, with its aga and wood-burning oven, is the focus of this homely restaurant, where the passionate chefs give a contemporary twist to classic Swedish dishes. Flavours are intense, contrasts are original and ingredients, top quality; they raise their own pigs (which eat the food waste) and also hunt, forage, pickle and ferment.

The chef's commitment
We cook food which will give something back to the world. We serve a menu based on vegetables and focus on lesser cuts and more humble ingredients – but this doesn’t mean we are serving lesser food.
Speciality
- King crab, chestnut crème, pickled turnip, nutmeg, buttered onion bouillon
- Fallow deer with wild mushrooms and whey
- Rosehip soup, chaga ice cream, wood-oven-baked almond cake
