Digital art that reverses left and right on the black tables, and India-ink writing on the walls, speak of harmony between nature and food, and the beauty of all creation. Guests all dine at the same table, underscoring the message that we must live and prosper together.

"UZU views sustainability in the natural environment through the prism of vegan cooking. Industrial-scale fishing generates carbon dioxide, UZU explains, while the livestock industry consumes vast amounts of water. Plant-based food, in contrast, imposes no environmental impact. UZU looks forward to the day when society puts recycling to the fore and vegetarianism is seen as plain common sense."
