The oldest house in Paris (1407) is named after alchemist Nicolas Flamel. In a pared-back contemporary interior enhanced by its old stones and beams, the high-flying kitchen brigade of Alan Geaam is hard at work crafting premium ingredients into harmonious dishes in tune with the zeitgeist: "chef's garden", carrots, apricots, peas and chervil; saddle and sweetbreads of lamb, aubergines and plums; poached peaches, Earl Grey tea and almond milk.
