MICHELIN Guide’s Point Of View
Arboré (which means ‘treelined’) wears its name well, like a winter garden, with cane chairs, floral wallpaper, smoked mirrors and artificial lemon and orange trees beneath a huge well of light within the Royal Madeleine Hotel. In the kitchen, Top Chef contestant, Pauline Séné, is disrupting gourmet codes in this well-heeled district of Paris. Her unconventional approach to cooking results in a modern, appealing menu rich in light, tasty dishes. The sustainably sourced ingredient is allowed to shout its name loud and clear, illustrated by veal sweetbread and mashed potato, entirely free of frills or gimmicks.
