Having previously worked with a number of great chefs (Antoine Westermann, Bernard Loiseau), Mickaël Feval has set up shop in the heart of Aix. His creative dishes showcase the seasons, local producers and classic produce (duckling from the Dombes, Challans poultry, foie gras, Dublin Bay prawn). The chef still likes to work with fish (a throwback to his stint working at Parisian seafood restaurant Antoine), as demonstrated by his tartare of sea bass with quinoa, grapefruit, avocado and a squid ink tuile, to be sampled in an unusual elongated dining space with small vaults and white walls. Be sure to order the rum baba! Professional and attentive service.
