Owner-chef Hiroki Nakanoue thrills customers with surprising shuko based on ideas he acquired overseas. Snacks prepared on a low-heat cooker and served on Western-style plates seem a little out of place in a sushi restaurant. The sushi, on the other hand, is grounded in Edo culinary principles. Using sweet vinegar for the hand-formed sushi to harmonize the flavour is the Sushiyoshi style.The contrast between the two menus is fascinating.
