Wild game can be savoured year-round at this counter-service-style French establishment. An explorer of little-known foodstuffs, owner-chef Yasumasa Deguchi works with game ranging from the familiar wild boar and venison to masked palm civet, nutria and raccoon dog. Wild fowl is paired with classic sauces: cream sauces for white meat and salmis for dark. The wide range of spices used showcases their limitless possibilities. At lunch, the inventive curries earn popular appeal.
