MICHELIN Guide’s Point Of View
The gamecock soba gets its depth of flavour from gamecock and Jinhua ham dashi, and pure soy sauce kaeshi. The dried sardine soba has a rich seafood flavour, and the medium-thick noodles go well with the soup. None of the ingredients, whether the roasted pork belly and chicken breast fillets, sprouts, ears of lacto-fermented bamboo shoots or chopped green onions, are overly stated. For Monday, only one kind of ramen is offered.
