True to its name, the shop’s noren (entrance curtain) sports a floral (hana) pattern. Owner-chef Toshimitsu Okunaka inspects his ingredients rigorously, scrutinising everything. Soup is prepared using several types of free-range chicken to draw out the umami. His insistence on organic soy sauce and vegetables is in keeping with his health-oriented motto. But pleasing appearance is important, too, so the chrysanthemum petals added to brighten up the bowls of ramen are a fitting touch.
