This minimalist restaurant opposite the city’s Guggenheim Museum exudes plenty of enthusiasm as it showcases the traditional cuisine of Northern Spain. Here, under the baton of chef Julen Bergantiños, choose between two unusual menus that change completely with every season and are based around seasonal ingredients sourced from small-scale producers, plus a constant and skilful use of native condiments. These menus are entitled “A-8”, after the dual carriageway that connects Galicia, Asturias, Cantabria and the Basque Country), and N-634 (the beautiful road that runs from Santiago de Compostela to Donostia/San Sebastián). The sauces here are truly delicious!
