MICHELIN Guide’s Point Of View
Dennis Willems strives to source all his produce from within a 15km radius of his restaurant. It feels like nature has taken root in this cosy place – and with good cause. Ingredients harvested from his own kitchen garden, foraged in the wild or purchased from producers in the vicinity are presented in a 14-course set menu. This inspired, modern culinary approach – with its respect for micro-seasons – is an ode to Zeeland's (mostly vegetable-based) riches.
Gastronomy & Sustainability
"Our dishes are largely plant-based with ingredients sourced from our own kitchen garden, from the wild and occasionally from growers and cultivators in the vicinity. Sometimes a dish is complemented by a wholesome piece of locally caught fish, meat or game. We strive to rely solely on produce sourced within a 15km radius. These are some of the ways in which we are increasingly prioritising keeping things sustainable, pure, green and local."
