MICHELIN Guide’s Point Of View

The impressive collection of paintings by the likes of Dubuffet, Braque, Kees van Dongen and Herman Brood gives this 17C stepped gable building its own personal touch. Art abounds everywhere you look here, and this superb setting has inspired Carlo Chantrel to create attractive dishes that live up to the highest of expectations.

The chef only uses quality products from the region including local asparagus from Etten-Leur, Oosterschelde lobster and chocolate from Zundert. His dishes have a classical base but new techniques add the occasional modern twist, with everything starting out from a main ingredient of the very best quality.

It is this successful formula that is the reason that De Zwaan has held a well-earned Michelin star since 1994.
