Named after the Sanskrit word for fire, Jwala is famous for chargrilled dishes cooked in its custom-built tandoori oven. Familiar ingredients like chicken and lamb chop are presented alongside less common offerings such as croissant, cottage cheese and hamachi collar. Tandoori tiger prawns marinated in mustard oil, yoghurt and spices, in particular, boast deep, rich flavours. The knockout curries are seasoned with local fruits and herbs.
