The exclusive boutique hotel is just one side of this beautiful old establishment, which boasts a fabulous view reaching all the way to Lake Constance. Another is the restaurant run by the duo of MICHELIN-starred chefs, Andreas Caminada and Silvio Germann: here, the latter, as head chef, uses the finest ingredients to cook up creative dishes – elaborate but not fussy, pared down yet with real depth of flavour. A rather unassuming name such as "salmon – lettuce" belies a wealth of complexity: premium Lostallo salmon, delicately seasoned and flame-kissed, served with an emulsified broth of buttermilk and lettuce, finished with an intense herb oil, strips of crisp young lettuce and fresh herbs. On the side, a small waffle basket with an aromatic and creamy salmon tartare, topped with a subtly bitter horseradish foam. The chic and modern wine cellar boasts over 1 000 different labels. The service team is managed by maître d' Giuseppe Lo Vasco, who is exceedingly attentive, charming and knowledgeable. The decor is an elegant blend of traditional and modern, and the terrace is wonderful.
