MICHELIN Guide’s Point Of View
This restaurant is a branch of an established fugu ryotei in Usuki, Oita Prefecture. Fugu is caught in the Bungosuido Strait and airlifted in. Dishes include thick cut tsukuri, seasoned with ponzu of kabosu and karaage seasoned with spices. The zosui served after the nabe is enhanced with a concentrated nikogori. This and other touches demonstrate uniqueness even within the orthodox flow of things.
