MICHELIN Guide’s Point Of View

This ryotei originated in Kyoto. It was founded in 1902 when Tomejiro Tsuji learned chakaiseki from the head of the Urasenke tea ceremony school. Third-generation owner-chef Yoshikazu Tsuji served as the chef for Rosanjin Kitaoji, so the restaurant owns several calligraphed tablets and serving dishes from that time. The hamo skin on rice is a summer speciality, with the hamo skin salty-sweet, and was born of Rosanjin’s teaching of letting nothing go to waste.
