MICHELIN Guide’s Point Of View

The elegant dashi featuring the umami of flying fish is the pride of this restaurant. The beef tendon is popular, and you can eat it with salty dashi or leek ponzu. Uwajima speciality produce like grilled tube-shaped fish paste cake and Jako ten (fried fish paste) are holdovers from when the first-generation founder lived in Ehime. We recommend ending the meal with udon with seasoned deep-fried tofu on top or chazuke, both with a tasty dashi.
