Bib Gourmand: good quality, good value cooking
The owner-sommelier pairs Vietnamese dishes with Japanese sake; the surprising affinity between the two derives from the many points in common between Vietnamese and Japanese cuisine. Noting that both eschew the use of oil in favour of generous amounts of vegetables, he opted to specialise in sake. With fermentation and sourness as the keywords, Ăn Cơm creates a dialogue between the two food cultures: shottsuru fish sauce dresses raw spring rolls; oysters are paired with yuzu citrus.
