MICHELIN Guide’s Point Of View

Inspired by the work of a Danish friend who dedicated himself to telling the world about Denmark’s culinary culture, Kohei Masumoto is a global ambassador of Japanese foodstuffs. With dashi as his foundation, he creates fermented, pickled and smoked delicacies. His combinations of ingredients from sea and land on a single plate are intended to mirror the natural world. Hatsu means ‘first time’, and his innovative menu items promise a novel and rewarding experience.

The chef's commitment
Our set menu includes vegetables grown without pesticides or chemical fertilisers and unagi raised in ponds heated with forestry wood waste. We chose the theme ‘sea and mountain’ so people will feel close to nature. We serve organic brown rice tea, helping maintain the traditional culture of Tohoku.
