MICHELIN Guide’s Point Of View

Yoshiaki Fujimoto combines classic techniques with a modern touch. He changes the set menu every month to emphasise the season. The focus of each dish is on seasonal ingredients, and the absence of a speciality speaks to the chef’s spirit of perpetual inquiry. Based on his experience of studying traditional French cuisine, he prizes sauces that are a concentrate of the ingredients’ essence and are richly fragrant.
