There are other surf hotels in the countryside around Hossegor, on the Atlantic coast of France’s South-West, but none quite like Relais du Silence Les Échasses, whose distinctive modernist lodges are made from untreated, chemical-free wood, and stand on stilts above the glassy water of a small lake. There’s an organic restaurant with a well-curated wine cellar as well as a small spa, and golf, as promised by the name, is an option at three nearby courses. The main attraction, however, is the surf culture of the Basque country and the southern Landes; the hotel can arrange surf lessons, equipment, and outings to the beaches, mere minutes away.
