When you’re a chef and you start to consider the idea of opening your own restaurant, you need to view it as a long-distance race and a dream that you can achieve either with the support of partners or by your own means, the latter option enabling you to achieve your goal in a much more special and liberated manner. This is definitely the case for Estefanía Maiorano and Martín Sclippa, the duo of chefs at the helm of Fico, a name chosen thanks to their Italian roots, “fico” (fig) being the name of their favourite ingredient in Italian, and a restaurant where they have won over locals with their cuisine in Villa Crespo. This dynamic pairing (with Estefanía taking primary care of the baking and pastry side of things) developed their culinary skills under celebrity chef Narda Lepes at the Narda Comedor restaurant. At Fico, they conjure up contemporary, market-inspired cuisine that usually starts with freshly baked sourdough bread and tasty canapés, followed by dishes such as fish of the day with a green salsa, cauliflower purée and almonds, or the delicate cabbage cannelloni with mushrooms, almonds and ajoblanco. The desserts here are always exquisite!
