Many restaurants boast of inspired flavors and technique, but few flaunt such cooking prowess as Maydān—a veritable showstopper whose roaring hearth verges on wildfire. The precision required of the team may be consuming and cooking technique elemental, but the results are delicious bliss. À la carte is available, but the prix-fixe is a popular feast, with bread and spreads; veggies and meats; and a dessert to round it out. Flatbreads with muhamarra, hummus and smoked mutabal is a meal unto itself; while tahini-coconut rice pudding with candied cardamom makes a compelling finish.
