In Italian, “noi” means “we”, a word that speaks of the importance of teamwork and the idea of a joint project. The young chef, who hails from Puglia (the region occupying the heel of the “boot” in the very south of Italy), proudly showcases a contemporary version of his homeland’s traditional cuisine, moving slightly away from the more commonplace Italian dishes and pizzas to offer a mouthwatering journey across the regions of Italy. As an added bonus, its elegant, meticulous interior recreates the “Italian pop” style of the 70s! Here, they normally use the “green” (verde) room for à la carte dining and the “Rioja” room for the tasting menu (“De sur a norte” (From South to North), featuring dishes such as tuna tonnato, parmigiana, caponata siciliana, linguine alle vongole etc).
