MICHELIN Guide’s Point Of View

Chef Koji Shindo takes familiar ingredients and turns them into something wonderful using Chinese cooking techniques. He mixes several kinds of homemade sauces to create original dishes based on traditional Shanghai and Sichuan cuisine. His Hoei sauce is made from dried shrimp, shallots and shrimp paste and used in stir-fried dishes and stew. The steamed whole chicken stuffed with eight ingredients is a dish he learned from a Shanghai chef and must be pre-ordered.
