Kaiseki menus here feature a combination of seasonal ingredients and wagyu procured from the family butcher shop in Iwate. Wild vegetables in spring and matsutake in autumn are also from Iwate. Quality seafood like hamo and fugu comes from Awaji and the Bungo Channel. Female snow crab, which has a short season, is a winter tradition. The ‘Tsumezake’ featuring roasted crab claw in hot sake is popular, as are meat dishes like beef cutlet and sukiyaki.
