As a young boxer, Chef Ahn Hyo-ju scraped by for years, working in kitchens to make ends meet. He joined the famed Ariake in 1985 and stayed until 2003, the year he opened his own sushi restaurant. Chef Ahn begins each morning at the fish market, ages his own salt and personally sources the natural spring water from Hanam to prepare the sushi rice. His integrity, together with his seasoned artistry makes dining at Sushi Hyo a delightful experience.
