Siot Seoul is Chef Kim Jun-hyung's homage to Chef Seo Seung-ho, pioneer of French cooking in Korea and his mentor. Operating under a strict reservations-only policy, Siot is an exclusively private dining space that offers three tables at most and a seasonal menu where ingredients are the main focus. Chef Seo's steadfast philosophy and Chef Kim's personality are apparent in the dishes that are intuitive and thoughtfully executed. From the décor all the way down to the plating of the food, minimal elegance is a recurring theme.
